Last name change

My GGF was born 1854 with the last name Tiffin. On his death certificate he is known as Tiffin-Wilson. There was no remarriage by his father or mother. For what reason would his name become Tiffin-Wilson? His father was Tiffin and there is no record of a Wilson in the family previously.

You say you have looked at George's family for the name WILSON, have you looked at his wife's family.
Presumably his widow or one of his children reported the death, what name was given?
Perhaps he added Wilson just to impress. You can call yourself what you like and it is perfectly legal as long as there is no intention to defraud.
What was his surname on the censuses? Do you think his mother lived with, but did not marry, a Wilson, perhaps after his father died? As you can find no relation with the surname Wilson, which is the usual reason for an additional middle or hyphenated surname, he must have plucked it out of the air.
Pretty uncommon, but possible.
