The couple on the 1841 Census you have are undoubtedly, Samuel ELLIOT and Helen/Ellen RAFFERTY, as born by the next 2 Census (1851 & 1861):

    1851: Coupers land, Kilmarnock, Ayrshire
Head: Samuel ELLIOT, 42, Earthern Ware Hawker, b Ireland
    Wife: Helen 27? , b Ireland
    Son: James 10,
    Son: William 7
    Dau: Catherine 4
    Son: Francis 1
    All children b Kilmarnock
(Original of the 1851 will probably show Helen to be in her 30's, perhaps 35-37)

1861: 15 Hill Head, Stranrear, Wigtownshire
    Listed in this order:
Lodger: James ELLIOT 21, Blacksmith, b Kilmarnock, Ayrshire
Lodger: Wm ELLIOT 7, Blacksmith, b Kilmarnock, Ayrshire
Lodger: Francis ELLIOT 10, Blacksmith, b [Kilmaronock, sic], Ayrshire
They are among 10 lodgers in household of John Dryesdale, Dealer, b [Dunnbia, sic], Ireland and his wife

while their Mum & Dad & sister are here:

1861: Diels [Devils?] Elbow, Old Cumnock, Ayrshire
    Listed in this order:
Lodger: Samuel ELLIOT 55, Hawker, b Ireland
Lodger: Helen RAFERTY* 45, Hawker, b Ireland
Lodger: Catherine ELLIOT 13, b Kilmarnock [Kelmanock, sic]
The lodging house is run by:
Catherine JARDINE 29, Lodging Keeper, b Ireland - in her house she has the 6 lodgers in total.

    * It was common for women in Scotland census to go by their maiden name, even if they were still married and often when they were widowed.

Does this tie in with the James ELLIOT you are tracing?
