cant find a marriage between william and mary smith. how do you know her surname wa smith?

Mary Smith is the brother of my 2nd Gt Grandfather George Smith.

Her parents were James & Elizabeth Smith nee Leaker, her father died and Elizabeth later re married to John Grainger and had a son Charles Grainger who is staying with Mary & William Ife on the 1881 Census.

After more searching for this family I have so far only managed to find Mary after 1881. William and Amelia died........that still leaves George and William to account for. Here's Mary in 1891. Address the rectory St Fagan's, occupation launderess. Marital status - widow.
